I don't think I made a post, but I've got paddles on mine. GAP charges a few extra bucks for the programming to enable paddles. You really just need the paddles, paddle harness, and the rear steering wheel cowel from a 14-16 with the paddle cut-outs. PowerfulUK was selling a kit for a while.
I tried a direct swap with a ‘16 wheel. Got it all hooked up but got errors saying cruise control and something else was inactive or non-opp. I can’t remember which. Something about the control packs obviously. I didn’t dig into it and didn’t want to swap out my control packs into the new wheel.

I’d say go for the 18” wheels and tires first. That will be your biggest off-road upgrade. You’ll still be able to fit a deflated 18” in the stock location so you don’t really “need” the spare tire carrier.
Quality roof rack like a Gobi stealth is the way to go. Have fun with it!
