It sounds like the locking mechanisms are messed up. Either way if it's under warranty, get it sorted out now. The mechanisms can be repaired I have read, or replaced. It seems like a huge hassle. I have one that is failing same symptoms -- you can check if the 2nd row lock mechanism manual...
I would prefer the AMK if it will fit. The main question to ask them would be does it hang down lower than the original. If it does, and not by much it will not clear I think.

That's an odd one for sure. It almost sounds as if the switch has gone haywire. Maybe you can find a buddy and swap it out. Driving it on the bump stops is possible, but I would not consider it safe, it won't handle well at all.

The low coolant error could be related to a bad float in the reservoir. The obvious first choice would be the thermostat. Replace the whole assembly, crossover comes with the thermostat. Following the service manual, you will want to properly bleed the system, these are very finicky on this...
Get a hose out, and stuck soaking it, section by section until you get the faults. It sounds like you need to inspect the cowl for sure, remove the cabin air filter and check for water damage, check your battery box and fuse box covers, etc.
