2003 land rover discovery

I just had a new coolant tank installed 2 weeks ago. 7 months previous I had new water pumps installed. This week the heat goes on and off temp light goes to hot and down again when I check the antifreeze it looks empty but when I take the cap off the antifreeze goes back into the coolant tank . What is going on? I have a love hate relationship with this land rover i do everything I can to take good care of it. Have the oil changed faithfully every 3-4ooo miles. new brakes. etc. etc.
Please let me know what you think it may be. Could it be the temp gauge?

Moved to the Disco section for better response...

First you should check the antifreeze level weekly if you like your Rover (check cold) Second if you are loosing too much antifreeze I would have the system pressure tested to find the issue... could be a head gasket or a dropped liner or something as simple as Thermostat.

Do not drive it again till you get some help, I am serious, you can totally ruin that engine by letting it over heat.
